Recipe:
Vegan quinoa salad with beetroot & vegan feta
Ingredients (2 servings):
- 1 cup quinoa
- 2 cups water
- 1 cooked beetroot, sliced or cubed
- 1–2 handfuls leafy greens (rocket, baby spinach, or whatever survived your fridge)
- 2–3 tbsp pomegranate seeds
- 80–100 g vegan feta, crumbled
- 1–2 tbsp nuts (walnuts or almonds, optional but smart)
Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice or balsamic vinegar
- 1 tsp mustard
- Salt & pepper
- Optional: a small drizzle of agave syrup
Instructions:
- Rinse the quinoa well. If you skip this, it tastes bitter and you’ll pretend it’s “earthy.”
- Cook it with the water for 12–15 minutes until fluffy. Let it cool slightly.
- In a large bowl, combine greens, quinoa, beetroot, and pomegranate seeds.
- Whisk the dressing ingredients and pour over the salad.
- Gently fold in the vegan feta and nuts at the end.
